During our recent Bekah Kate's Cooking Class, Chef Lori wowed us with her crispy, flavorful Buttermilk Chicken Bites. These bites are crunchy on the outside, juicy on the inside, and full of flavor, thanks to Lambs & Thyme Fireworks Seasoning.

Owned by Bekah Stelling, Lambs & Thyme celebrated its 35th anniversary in 2024, and their spice blends continue to be a staple in kitchens across the country. The Fireworks Seasoning adds just the right amount of bold heat to these chicken bites, making them a perfect snack or appetizer for any occasion.
Ingredients:

32 oz buttermilk

1 ½ pounds boneless, skinless chicken breasts, cubed

1 packet of Lambs & Thyme Fireworks Seasoning

1 cup Panko crumbs

½ cup cornstarch
Instructions:

In a bowl, combine buttermilk and half of the Fireworks Seasoning. Whisk to combine.

Sprinkle the chicken with a teaspoon of Fireworks Seasoning and stir into the buttermilk mixture. Add more buttermilk until the chicken is submerged.

In a separate bowl, mix the remaining Fireworks Seasoning with Panko crumbs and cornstarch.

Coat each piece of chicken with the Panko mixture.

Heat oil in a pan and cook the chicken bites until crispy and golden brown. Serve with ranch for dipping.
