Springtime with Olivelle at Bekah Kate’s

Our recent class at Bekah Kate’s was packed with fresh summer flavors, easy entertaining ideas, and creative ways to use Olivelle oils, balsamic vinegars, and seasonings. From refreshing mocktails to crispy oven fries and Mediterranean-inspired wraps, guests left with plenty of inspiration to recreate these recipes at home.

Here’s a recap of the recipes we made during class.

 


 

Balsamic Spritz

A refreshing summer mocktail with fresh berries and sparkling citrus flavor.

Ingredients

  • ½ ounce Olivelle Sweet Balsamic Vinegar

  • Fresh berries

  • Lemon or lime slices

  • Sprite, 7-UP, Squirt, or sour soda

  • Sugar for the rim

Directions

Pour a small amount of balsamic vinegar onto one plate and sugar onto another. Dip the rim of your glass into the vinegar and then into the sugar.

Fill the glass with ice. Add the balsamic vinegar and stir. Top with soda and garnish with fresh berries and citrus slices.

 


 

Homemade Oven Fries

These crispy oven fries can be customized with your favorite Olivelle oils and seasonings.

Ingredients

Directions

Preheat oven to 425 degrees and line a baking sheet with foil.

Slice potatoes lengthwise into fry-shaped strips, leaving the skin on. Place cut potatoes into a bowl of cold water while slicing.

Drain and pat potatoes dry. Drizzle olive oil onto the foil-lined baking sheet. Add potatoes and season generously with your favorite Olivelle seasoning blend. Toss to coat evenly.

Bake for 20–25 minutes, flipping halfway through, until golden brown and crispy. Serve with homemade aioli.

 


 

Homemade Aioli

Once guests saw how easy homemade aioli can be, they immediately started planning flavor combinations to try at home.

Ingredients

  • 2 egg yolks

  • 1 tablespoon Olivelle vinegar

  • 1 tablespoon whole grain or Dijon mustard

  • 1 cup Olivelle olive or avocado oil

  • ½ teaspoon salt

Directions

Immersion Blender Method

Place all ingredients into a mason jar or tall container. Blend until thick and creamy.

Blender Method

Add egg yolks, vinegar, mustard, and salt to the blender. Blend for 10 seconds. With the blender running, slowly drizzle in the oil until thickened.

Store in a sealed container in the refrigerator for up to one month.

 


 

Mediterranean Chicken Wraps

Fresh, flavorful, and packed with bright Mediterranean ingredients.

For the Chicken

  • 2 chicken breasts

  • 2 tablespoons Cucumber White Balsamic Vinegar

  • 1 tablespoon Garlic & Herb Olive Oil

  • 2 teaspoons Lemon & Dill Tzatziki Seasoning

Vegetable Mixture

  • 1 cup diced red onion

  • 1 cup diced English cucumber

  • 1 cup diced Roma tomatoes

  • 1 tablespoon Cucumber White Balsamic

  • 2 teaspoons Lemon & Dill Tzatziki Seasoning

Wraps

  • 4 large tortilla wraps

  • 2 cups spinach

  • 1 cup feta cheese

  • Hummus or tahini dressing

Directions

Butterfly the chicken breasts and place into a bowl. Add balsamic vinegar, olive oil, and seasoning. Marinate for at least 30 minutes.

In another bowl, combine onion, cucumber, and tomatoes with balsamic vinegar and seasoning.

Heat a skillet over medium heat with a small amount of olive oil. Cook chicken about 6 minutes per side or until fully cooked. Let rest before slicing thinly.

To assemble wraps, spread hummus or dressing onto the tortilla. Layer spinach, vegetable mixture, feta, and sliced chicken. Fold in sides and roll tightly.

 


 

Hummus

Creamy hummus makes the perfect addition to wraps, snack boards, and vegetables.

  • 2 cans chickpeas, drained and rinsed

  • Juice of one lemon

  • 1 teaspoon salt

  • 1–3 teaspoons chopped garlic

  • 2 tablespoons Olivelle olive oil

  • ¼ cup tahini (optional)

  • Water as needed

Directions

Add all ingredients to a blender or food processor and blend until smooth. Add small amounts of water if needed to reach desired consistency.

Customize with roasted red peppers, jalapeños, olives, chipotle peppers, or additional seasonings.

 


 

Berry Balsamic Shortcake Cups

An easy summer dessert layered with balsamic berries, whipped cream, and cake.

Ingredients

  • 2 cups strawberries, diced

  • 2 cups blueberries

  • ½ cup powdered sugar

  • 2 cups heavy whipping cream

  • 4–5 tablespoons Raspberry or Strawberry Balsamic Vinegar

  • 2–3 tablespoons Sicilian Lemon or Blood Orange Olive Oil

  • Cubed angel food cake, yellow cake, or pound cake

Directions

Combine berries with balsamic vinegar and stir gently to coat.

In a mixing bowl, beat heavy cream, powdered sugar, and olive oil until stiff peaks form.

Layer berries, cake cubes, and whipped cream into serving cups. Repeat layers and top with additional berries.
