One dish that has its roots deeply planted in Southern cooking is Dirty Rice—a flavorful, hearty dish that gets its name from the “dirty” color of the rice after it’s cooked with spices, ground meat, and vegetables. But as much as this dish is a staple in Cajun and Creole cooking, it’s also a versatile recipe that can be adapted to fit a variety of tastes and dietary needs.

In our most recent Bekah Kate's Cooking Class, we used the bold flavors of Lambs & Thyme Kickin’ Cajun Seasoning to spice up this classic. But before we dive into the recipe, let’s take a deeper look at the history of Dirty Rice and explore some essential tips on cooking rice that will help you create the best version of this dish every time.

Dirty Rice is a traditional Cajun dish that originated in Louisiana, where it was often made with leftover meats like chicken livers, gizzards, or pork. These ingredients were combined with rice, vegetables, and spices to create a flavorful, one-pot meal. The dish is often associated with the Creole and Cajun cultures, which both have deep roots in Louisiana’s history.

The term “dirty” refers to the color of the rice, which gets darker as it’s cooked with the meat, spices, and vegetables. Over time, Dirty Rice has evolved, and today it’s typically made with ground beef, pork, or sausage, though variations abound depending on region and personal preference. Cajun Dirty Rice Recipe

Ingredients:

  • ½ pound of pork sausage

  • ½ pound ground beef

  • 1 Tbsp Olivelle Avocado or Olive oil

  • 1 pepper (any color), diced

  • 1 medium onion, diced

  • 3 cloves garlic, minced

  • 1 Tbsp Lambs & Thyme Kickin’ Cajun Seasoning 

  • ½ tsp salt

  • 3 cups cooked rice (preferably cooked the day before)

  • 3-4 cups beef broth (or chicken broth)

  • Green onions and parsley for garnish

Instructions:

  1. Heat a dutch oven over medium heat and add a bit of oil. Brown the sausage and ground beef until no pink remains.

  2. Add the diced vegetables, Lambs & Thyme Kickin Cajun Seasoning, and garlic. Cook for about 5 minutes until the vegetables soften.

  3. Stir in the cooked rice and beef broth. Bring to a boil, reduce the heat, and simmer for 10 minutes until most of the broth is absorbed.

  4. Garnish with green onions and parsley, and serve hot.

 


 

Tips for Perfecting Your Dirty Rice

  • Use Cold Rice: If possible, cook your rice the day before and refrigerate it overnight. This will keep the rice from becoming mushy and will help it absorb the flavors better.

  • Customize the Heat: You can adjust the heat level by adding more or less Lambs & Thyme Kickin’ Cajun Seasoning or adding extra cayenne pepper to suit your taste.

  • Try Alternative Rice: For a healthier twist, try using brown rice, quinoa, or even cauliflower rice for a lighter version.
